Lemon Chicken Recipe



2 Chicken Breasts

2 Tablespoons Olive Oil

1/3 Cup Chopped Onions or Shallots

Parsley, as much as you like (the original recipe calls for 1/4 of a cup. I prefer to use less)

1/2 Teaspoon Oregano

1/3 Cup Lemon Juice

Zest of 1 Lemon

Cube the chicken breasts and cook in pan over medium/high heat with oil until almost done. Add all other ingredients, drizzle with a little more olive oil, cover and let simmer about 7 minutes or until both the chicken is done and the onions are translucent, stirring occasionally. Serve over pasta or quinoa.
